I have always loved to cook, these days, I do not have much time to spend days thinking about recipes and making wonderful homemade food. Cooking and baking having always been a creative outlet for me. Before jewelry, I would be looking at cookbooks constantly, planning my next dinner. Overtime and with much practice, I became a very good cook.
I refer to recipes for baking because it is necessary but I do not need a cookbook to make something wonderful and delicious for dinner. I try to buy organic food and visit the local green market on Sunday morning.
This recipe that I am posting is delicious and simple. This recipe can be made with a variety of vegetables. Today, I have made this recipe with roasted zucchini squash. I have made this vegetable dish many times before using eggplant, yellow squash etc. Anyone can be a good cook, if you are interested in learning about culinary art.
I cannot stress enough how easy it is to make wonderful food at home. You can vary the amounts of vegetables and cheese mixture, it will all be wonderful. Cooking is not an exact science, you can improvise and use your own special touch.
8-10 organic zucchini squash– cut lengthwise—organic salt and pepper to taste
2 organic eggs mix with 2 cups of ricotta cheese
2 cups of tomato sauce– I use organic sauce from Costco
Good quality grated cheese on top, available at Costco in large quantities
Roast zucchini in hot oven at 400 until slightly brown about 30-40 minutes
Layer zucchini and cheese mixture light lasagna– cook in 350 until golden brown 40 min
